My Name is Joseph, I fell in love with Texas barbecue about 10 years ago, and have been pit master at Smokestak for 8 years so in 2025 I finally realised my dream of starting my own barbecue business.
Starting at local markets with borrowed equipment ive managed to start building my brand and brining food I love to cook and eat to everyone.
based in south London my eventual goal is to get whole animals and use every bit of it, no waste and imaginative eats.
Ive also chosen to work with British butchers that work with farms using regenerative agricultural practices, which I believe is the way we should farm for a better planet and the food system.
